A taste of summer in Rugao

Summer in Rugao, Jiangsu province, is as much about seasonal flavors as it is about sunshine. From juicy fruits to comforting local specialties, the city's summer table is filled with dishes that help beat the heat while showcasing the region's culinary traditions.
Nothing says summer quite like Changqingsha watermelon. With its thin rind, tender flesh and refreshing sweetness, it's a favorite way for locals to cool off on hot days. Another seasonal highlight is spicy crayfish, simmered in a rich, aromatic broth until the shells glow bright red and the meat turns firm and flavorful.

Morning begins with Rugao's beloved breakfast classics. Crispy sesame shaobing, made with traditional fermented dough and a juicy pork filling, pairs perfectly with steamed crab roe buns, whose golden filling delivers the rich taste of fresh crab in every bite. A bowl of Panshui noodles, topped with anything from shredded pork to crab roe, is another local favorite.
For lighter fare, Rugao's countryside offers an abundance of fresh seasonal vegetables. Tender sponge gourd, whether stir-fried or served in a delicate soup, is a summer staple, while fragrant Agastache (huoxiang) is widely used in cooking and herbal tea.
