For generations of people in Rugao, Jiangsu, the sweet aroma of Yangtangyao has been part of childhood memories and everyday life.

A traditional local snack, Yangtangyao is made from a simple combination of glutinous rice flour, fine sugar and water. The dough is kneaded into strips, twisted into braid-like shapes and deep-fried.

What sets Yangtangyao apart is its sugary coating. Rice flour is mixed with white sugar to create a light, powdery mixture, which is sprinkled over the freshly fried snacks in a generous amount while they are still hot. The heat allows the sweet powder to cling to the surface.

Simple ingredients and an uncomplicated recipe give Yangtangyao its unique appeal that has kept the traditional snack alive in Rugao kitchens for generations.
