In Rugao, breakfast is more than just the first meal of the day — it is a cherished local ritual, rich in variety, tradition and flavor.

A typical morning in the city begins with a steaming bowl of noodles. Rugao-style noodles are known for their rich, savory broth and pleasantly chewy texture, while the toppings come in such a wide range that locals often say you could enjoy a different bowl every day for a week.

Steamed buns are another breakfast favorite and a true staple of the local table. Popular choices include crab roe buns packed with rich crab paste, juicy soup dumplings with delicate wrappers and generous fillings, as well as a variety of xiaolongbao and other stuffed buns filled with ingredients such as mushrooms, preserved mustard greens and shredded radish.

For those who prefer something crisp and hearty, Rugao's baked sesame flatbread is a classic option. Traditionally baked in old-style ovens, it is prized for its flaky, layered texture and is often paired with a bowl of silky tofu pudding topped with chopped pickled mustard greens and celery.

Another beloved breakfast item is corn grits porridge, though locals rarely eat it on its own. Instead, it is typically accompanied by a colorful spread of side dishes, including dried radish, fermented tofu, fish aspic, pickled vegetables and salted duck eggs.

Rugao's breakfast culture also shines through in its smaller savory snacks. Buckwheat egg pancakes and scallion oil shaomai are among the many local specialties that add further variety to the morning menu.
