Local specialties from Tongzhou win national recognition

Two local specialties from Tongzhou district, Nantong, East China's Jiangsu province, recently made the list of the provincial-level top 100 rural products.

The two products are the Xinzhong fermented bean curd series and Xiting crispy biscuits.

Xinzhong fermented bean curd originated in Shigang town in Tongzhou. Jiangsu Xinzhong Brewery Co Ltd has blended traditional craftsmanship with cutting-edge technology to create a distinctive taste.

The company uses green, pollution-free soybeans and glutinous rice as ingredients and employs self-brewed yellow wine aged for six months and treated soft water to create a unique process. This approach allows ample fermentation time, elevating the quality and taste of the end product.

Xiting crispy biscuits have their roots in the ancient town of Xiting in the Qing dynasty (1644-1911), making them an authentic specialty of Nantong.

The biscuits are meticulously crafted using only the finest ingredients and are entirely handmade. The production process involves a rigorous sequence of 28 steps. Each biscuit emerges from the oven with 18 layers, achieving a delightful crispness.

These biscuits are known for their sweet and fragrant flavor and have gained in popularity among consumers.
