Steamed pork with salted dried mustard cabbage is a traditional dish in Hai'an, Nantong and a staple of local banquets. It is believed to bring good fortune.

The dish is also known as "tiger skin steamed pork" as the steamed pork skin looks like tiger skin.

Streaky pork with tight meat is the best ingredient for the dish. To prepare it, one needs to first boil the streaky pork in cold water with green onion, ginger, and cooking wine and then prick holes in the pork with a toothpick and brush a layer of soy sauce over it.

The pork is then sliced into thin pieces after being fried and boiled for 20 minutes. Pieces of streaky pork are then put in a bowl and minced salted dried mustard cabbage is placed over them with various seasonings.

The mixture is then put into a steamer to steam on high heat until its smell permeates the whole room. The last step is to put the mixture on a plate upside down to display the tiger skin-like pork skin.

Salted vegetables go well with streaky pork as their saltiness compliments the greasy flavor of the pork.
