Egg dumplings are a must-eat dish for Hai'an natives during the Spring Festival and is eaten in hopes of good fortune as their appearance resembles a shoe-shaped gold ingot.

Although egg dumplings taste delicious, they are time-consuming to prepare.
One first needs to prepare one large bowl of well-stirred egg pulp and one large bowl of chopped meat. Next, pour a thin layer of egg pulp into an iron spoon over a stove, put some chopped meat over half of the egg pancake before it is well cooked and then cover the meat with the other half of the egg pancake. Then you're all finished, and they can be eaten right away.

The most common way to eat egg dumplings in Hai'an is to stew them with chicken soup, edible fungus, sliced bamboo shoots, and green vegetables.
