It is a common scene in the season to see people with simple baking stoves peddling newly-roasted sweet potatoes on the street.

Sweet potatoes tend to become rotten when the temperature is below zero. Therefore, Chinese people would air dry sweet potatoes after slicing or dicing them to better preserve the food. They would then use the dried sweet potatoes to cook with rice or grind them up to make sweet potato pudding.
