Rugao cuibing: A taste of childhood

Chen Xiumei, 65 years old, has been selling cuibing, a Rugao-style cracker, on Guoyuan Street, Rugao for decades.
The art of making cuibing, which was handed down from her husband's great grandfather, boasts a history of more than 100 years.
For 35 years, the couple has insisted on making the snack by hand. Although it is not perfectly shaped like those made by a machine, many believe that handmade cuibing tastes superior.
It usually takes two hours to prepare enough dough to fill an oven. Each chunk of dough is rolled over and folded repeatedly, so that it has 18 layers and tastes crispy after baking.
Neighborhood residents are crazy about Chen's cuibing, and many of them have been eating the snack since childhood.
