The puffer has the distinctive characteristics common to the three delicacies of the Yangtze River: it is carnivorous, migrates both river and sea, and is tender and delicious. It is a much desired fish and its historical origin and cultural connotations are also quite profound. It is rich in nutriments with high protein, low fat, and particularly high unsaturated fatty acid content; it also contains 16 kinds of amino acids. It has unique health care functions, including maintaining the balance of human nutrition, improving the skin, enhancing the immune system, tuning brain intelligence, and balancing the autonomic nervous system.
